Matcha is a powdered green tea used in the Japanese tea ceremony, with an intense green color and a sweetish, slightly tart flavor in later pluckings. The tea contains catechins as well as carotenes and vitamins A, B, C, and E.
The green tea intended for matcha is harvested from tea bushes that are usually shaded for four weeks before harvesting, resulting in a delicate, dark green leaf. After harvesting, the tea leaves are steamed, dried and, after removing all coarse leaf vessels, ground into a fine powder in stone mills.
Matcha is considered a particularly noble tea variety and is correspondingly expensive. The tea should be well sealed and stored in a cool and dry place.
