Lemon curd, also known as lemon cream, is a sweet and sour cream traditionally made from eggs, sugar, butter, lemon juice and lemon zest. It has a pudding-like consistency and an intense lemon flavour. Lemon curd originates from Great Britain, where it is a popular spread. As well as being used as a spread, lemon curd can also be used in a variety of ways in the kitchen. It is ideal as a filling for cakes, tarts and pastries, for refining desserts such as yoghurt or ice cream - or even for cocktails.
