Caramel (alternative spelling: caramel or caramel) is a mixture of melted sugar and its oxidized and condensed reaction products produced by strong, dry heating. Depending on the temperature, it turns golden yellow to deep brown and develops the typical roasted aroma (caramel odor). Depending on the degree of roasting, caramel tastes sweet to bitter.
